Dinner at Rachel's

Probably the nicest meal I've had in a couple of years was at my friend Rachel's house on March 25th. Her husband went out of town and took two of their kiddos with him, and she seized the opportunity to have a girl's night out dinner for Kelli King and I. (Get it, King and I? Ha! Okay, so I'm the only one that thinks that's funny. Fine.) Rachel spoiled us rotten. In a good way. Hello? Can I just tell you that she had appetizers? A cheese platter. And some kind of incredible roasted pickled vegetables that I can only describe as perfectly delicious. Yep. And let's just say that the main course, which comprised of bacon-wrapped pork tenderloin, mushroom tarte, and baby spinach cranberry salad along with sparkling lemonade, was DIVINE. And the table was set beautifully and I felt like a princess. I'm sure Kelli did too, especially since Rachel held her baby the whole time. A truly wonderful evening.
