One Night Last Month

I decided to make some rolls, having run across a recipe in my file that looked promising and not too complicated at first (and fleeting) glance. I'm a pretty novice bread-maker. I've just begun in the last couple of years to figure out how the dough is supposed to feel and look, etc. But even I could tell, halfway into making these rolls, that the recipe was incomplete. As in, I had to make these rolls without knowing the full recipe! I must admit to having muttered or shouted a few not-so-nice words after I figured out that 3 cups of flour just wasn't enough.

I was flying blind, adding flour like a madwoman. At the last minute, I decided to use half the dough to make cinnamon rolls. The thinking was that anything could be redeemed with butter, sugar and cinnamon. I was right. The rolls were horrible. The cinnamon rolls were splendid. Moral to this story? If life hands you cruddy dough--MAKE CINNAMON ROLLS!

Rolls

2 T yeast
1/2 cup sugar
2 t baking powder
2 t salt

Mix above togethr with a fork.

1 stick of butter
1 1/4 cup milk
1/2 cup warm water

Heat above three ingredients on the stove until warm, but do not boil. I usually heat it until it feels hot to my pinky finger tip, but doesn't burn it. Add the liquid to the dry mixture.

Then add 2 eggs, mixing for 2 minutes. Next add 3 cups of flour, one cup at a time. Mixing between each cup.

I roll the dough into small balls, putting three balls into each cup of a muffin tin.

Let rise for 30 minutes. Then bake for 12 minutes at 375 degrees.
